Phase 2A of the nation's vaccine program began yesterday, with over 50s now eligible to have their jabs.
In Victoria, 6923 people were vaccinated as the state rolled out mass vaccination hubs.
That includes around 1000 people at the Royal Exhibition Building, and more than 2000 at the Melbourne Convention and Exhibition Centre, which are among 22 hubs.
In comparison, last Monday Victoria gave out fewer than half that number of jabs, a total of 3369.
Health Minister Martin Foley said the state "probably had its most significant vaccination day" yesterday.
The state has now given a total of 220,000 doses, mostly of the first of two jabs which are needed, 12 weeks apart.
Some people had to wait for more than two hours yesterday in Victoria, with booking lines also inundated - in the morning alone 850 people phoned up to try and book.
Some of the walk-in clinics had to turn people away as they were too busy.
Meanwhile NSW gave 3984 vaccines yesterday, bringing its total to 215,006.
Victoria is the only state or territory which has so far opened mass vaccination centres in addition to GPs.
Similar centres are planned in NSW including at Sydney's Olympic Park, but won't open for three more weeks.
A total of 2.2m jabs in total have been given out in the nation - with the government's initial target of 4m doses the end of March still millions of doses away.
Total vaccine numbers for Monday and Tuesday nationwide have not yet been published by the government.
Across Australia, the vaccine rollout is being split into two, with the Federal Government handling aged care and health workers, and states looking after the rest of the population.
Currently phase 2a is underway, which means people aged over 50 can book.
The original plan was to have the nation vaccinated by October this year but issues with supply and logistics as well as health advice over very rare blood clots have added to the delays.
